A Recipe for Rain

Monday, January 01, 2007

It's been a good week. Partly, it was because Canberra has been blessed with several thundery rainstorms to ring in the new year. Hopefully this is a trend that will continue, because the dams are still (almost) empty. It was also a good week because most of our noisy neighbours went off on holiday, giving us an unintended Christmas present of peace and (relative) quiet.

We also had some excellent bbq Tasmanian salmon for Christmas dinner (on what must be the smallest bbq in all of Australia, but what he heck, it works)...I just thought I'd share it with you (the recipe, that is):

Take one big salmon steak (enough for two people), and cover ot with copious amounts of maple syrup mixed with soy sauce. Let it marinate for several hours in the fridge. Meanwhile, mix another batch of maple syrup and soy sauce, throw in a sauce pan and let simmer on the stove until thick and syrupy. This will be used as a glaze, later on. Heat up your bbq on its highest setting. Sprinkle some freshly ground pepper on the salmon before putting it on the grill. Bbq for about 5 minutes on each side. Just about a minute before taking it off the grill, pour the maple glaze onto the salmon. Serve with grilled slices of pineapple & steamed rice.
